A New Brew Lab

Labrewatory ArtThe newest addition to Eliot in the brewery category is Labrewatory.  Located on Russell just east of Widmer and west of Ex Novo, craft brewers can come to this brewers playground to collaborate and create small batch beers.

Owner, Chris Sears, has brought in high quality brewing equipment – a 3.5 bbl steam system from Portland Kettle Works.  Therefore, beer makers can experiment with flavors and ingredients without having to make large batches in the initial creative stage of what can become the next great beer.  You’ll find cutting edge experimentation and new ideas from the best brewers in the World.

A few examples of the creativity that’s coming out of Labrewatory brewers are the Hulk S.M.A.S.H, an IPA made from single hop, single malt using only Cascade hops in the mash and finishing but not in the boil of the process and the Cherry Porter, a dark Belgian Abbey Ale.  Also a French Saison and a chocolate version with cocoa nibs as well.  Beers under fermentation are listed on a digital board above the barrels and a chalkboard on the wall above the bar lists the current taps—16 in all. Approximately four of them will be beers made specifically at Labrewatory.

Tamales from Tamale Boy can be served up along side your beer.  (Watch for Tamale Boy’s opening soon in the same building as Labrewatory.)
